This is the simplest way to make a nice chicken soup base.
3 x chicken shell
ginger
3-6x dry scallop
- Start boiling water into a large stockpot. It really doesn't matter how much water you boil, but make sure you make room for the chicken shell
- Wash the dry scallop and put them into the stockpot
- Put 1-2 slices of ginger into wok
- Boil a wok full of water, and put some slices of ginger into the wok
- Wash the chicken shell, and remove excess chicken fat
- Put the chicken shells into the wok when the water is boiling, turn them once or twice, and put them out of the water after 10 minutes
- Wash the shells in cold water, and put the shells into the stockpot
- Bring the stockpot to full boil, and then turn down the heat to simmer
- Simmer for 2 hours or so, if the water level is getting too low, put more boiling water into the stockpot
